The estate has the privilege of producing and vinifying the most prestigious Burgundy crus. The notoriety of these appellations has been acquired through the transmission of know-how over the generations. The climats range allows us to combine the work done on the cereals with the heritage of Burgundian traditions. I have selected barrels that were used to mature my Pommard wines. With the same philosophy and rigour as for the estate wines, we tasted the beer regularly to ensure that the maturation was subtly present in the tasting without going overboard. When I came back to Burgundy after my studies, I immediately understood that the winemaker had to let the terroir express itself. It is with this conviction that my beers are produced.
