The estate has the privilege of cultivating and vinifying the most prestigious Burgundy vintages. The reputation of these appellations has been acquired through the transmission of know-how over the generations. The climats range allows us to combine the work carried out on cereals with the heritage of Burgundian traditions. I selected barrels that had been used to age my Pinot Noir wines. With the same philosophy and rigor as for the estate's wines, we regularly tasted the beer to ensure that the aging was subtly present in the tasting without going overboard. When I returned to Burgundy after my studies, I immediately understood that the winemaker must let the terroir express itself. It is with this conviction that my beers are produced.
