I am a farmer and I want to show that it is possible to eat healthily with artisanal cuisine prepared with care and with products whose origins are known. The meats come directly from my farm 20 minutes from the restaurant. My cows and sheep eat grass and cereals grown on the farm.
Since the meat comes directly from my farm, the availability of certain dishes depends on the animals slaughtered. Everything is cooked with respect for the living. Cooking is mainly done in a bread oven and a brazier using wood from the park. The tables are set at the Château located in the commune of Chaudenay, a few kilometers from the wine-growing coast.
A selection of the estate's wines can of course be found on the menu, but I am also very proud to offer wines from Burgundy and elsewhere from winemakers whose vintages I greatly appreciate.
