Nicolas Dutour is a close friend. He teaches future oenologists in Toulouse, is a consulting oenologist for 50 estates, and is finally the technical manager of the Clos Roca estate in Nizas, in the Pézenas appellation. With global warming, the challenges Nicolas faces in his region are those that Burgundy will face in the years to come. It therefore seems obvious to me to anticipate my technical choices by communicating regularly with my friend. In addition to our discussions, we develop Pinot Noir and Chardonnay vintages together. Agronomy, viticulture, training methods, plant material, maturity, alcohol, acidity—all the parameters are reviewed. This work constitutes the R&D part of the estate. At the rate our interprofessional organizations are progressing, I much prefer to take the lead if I want my children to one day be able to make wine in Burgundy. This Chardonnay vintage is fresh, delicious, and has a mineral finish. This is an excellent vintage to discover the white wines that I love to make.
