Top-fermented wheat beer. The brew is partly made with raw wheat from a Burgundian farmer. More than 40% of the wheat is used to give the beer its typical acidity and roundness. We use neutral yeasts and traditional hops to let the grain express itself as much as possible and reveal the terroir from which it comes.
