Facing south, this climate is rather sunny. Maturity can go quickly. Harvesting should therefore not be delayed. which doesn't bother me because I never take a vacation before the harvest in order to be able to follow the evolution of the maturities. This follow-up work makes it possible to harvest the grapes with the desired balance. The goal is to have nothing to do in the cellar. Even in sunny years, the terroirs of Saint-Aubin manage to retain freshness. This is what I really like about this appellation.
