Bruno Doucet, having taken over the reins of the restaurant, offers a technical and generous cuisine; the menu is comforting and accessible.
His motto: "respect for the products, just seasoning, perfect cooking".
To accompany the 2018 Folie Sauvage, chef Bruno Doucet first offers us eggs with crab meat mayonnaise, then beef tartare.
