The Baptiste Renouard x Armand Heitz agreement
Posted by Armand Heitz onIt was with a warm welcome that Baptiste Renouard received us at Ochre, his establishment which opened a little over a year ago, in a quiet little street in Rueil Malmaison. Trained in prestigious Parisian tables (Robuchon, Le Meurice, Jacques Faussat, etc.) and candidate for the Top Chef show (2019), his cuisine is technical and creative.
This table seats around 30 and offers a classic lunch menu and a five- or seven-course tasting menu in the evening. The proposed menu is scalable and daring, distinct flavors, while respecting a seasonal supply, from producers in short circuits.
The proposed pairing with Chassagne-Montrachet 1er cru Maltroie 2018 is line-caught sea bass candied in thyme and lemon oil. It is accompanied by a coulis of nasturtium leaves. The addition of condiments, caviar bottarga, glasswort, sorrel and lime enhance the dynamics of this tonic and fresh marriage.
